Rice Paper Rolls – Low FODMAP

  • 250 g Vermicelli noodles
  • 1 Carrot grated
  • 1 Cucumber halved and thinly sliced
  • 1 Red capsicum seeded and thinly sliced
  • ¼ cup Coriander fresh and chopped
  • 8 g Spring onion only tops finely chopped
  • 150 g Prawns or anything other cooked meat, fish or tofu)
  • ½ Lime juiced
  • 1 tbsp Fish sauce (soy sauces for a vegetarian option)
  • ½ tsp Brown sugar
  • Rice paper x8


  • Put vermicelli into a bowl and cover with boiling water. Let stand until the noodles are soft then drain. Cut noodles into short lengths with kitchen scissors
  • Whisk together lime juice, fish sauce and brown sugar, set aside.
  • Soak rice paper round in cold water until just soft and pliable. Layer rice noodles, vegetables and prawns on therice paper. Fold in the sides as you roll to form a neat package. Repeat with the remaining rice paper rounds andfilling.
  • Serve rolls with the dressing.
