Instructions
Put vermicelli into a bowl and cover with boiling water. Let stand until the noodles are soft then drain. Cut noodles into short lengths with kitchen scissors
Whisk together lime juice, fish sauce and brown sugar, set aside.
Soak rice paper round in cold water until just soft and pliable. Layer rice noodles, vegetables and prawns on therice paper. Fold in the sides as you roll to form a neat package. Repeat with the remaining rice paper rounds andfilling.
