Maple Mustard Chicken breast

  • 1 skinless chicken breast
  • 1 tbsp maple syrup
  • 1 tsp wholegrain mustard
  • 1 clove garlic clove crushed
  • 1 tsp Drizzle extra virgin olive oil
  • 1 carrot sliced
  • 100 g broccoli chopped into florets
  • 100 g baby spinach to serve


  • Heat oven to 180 degrees (c)
  • Mix together the syrup, garlic, mustard and oil and add chicken breast. Place the chicken breast and marinade in a piece of foil big enough to wrap it up into a parcel and place in the oven for 15mins or until cooked through
  • Steam the carrot and broccoli and serve with raw spinach
