Banana, carrot & zucchini muffins

Ingredients

  • 1 cup wholemeal self-raising flour
  • 1 banana
  • 1 carrot
  • ½ small zucchini
  • 1 Egg
  • cup Reduced-fat milk
  • 2 tbsp honey or pure maple syrup
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 180ºc and line a muffin tin with 6 paper cases
  • Add flour, egg, milk, honey, and cinnamon together in a bowl and stir until combined
  • Mash the banana and grate the carrot and zucchini, add these to the bowl and stir until combined
  • Spoon the mixture into patty cases and bake for 15 minutes or until golden
