Vegetable Lentil Bolognaise (Children)

Ingredients

  • 2 Brown Onion diced
  •  
    20 g Garlic minced
  • 5 Zucchini grated
  • 5 Carrot grated
  •  
    1 tbsp Herbs mixed, dried
  •  
    1.6 kg Tomato, canned uncooked, undrained
  • 0.75 cup Tomato paste no added salt
  •  
    1.2 kg Brown Lentils, canned drained
  • 2 cup Cheddar cheese
  •  
    600 g Wholemeal Pasta
  •  
    0.75 cup tomato Sauce reduced salt
  • 4 tbsp Olive oil

Instructions
 

  • Brown onion in oil, add garlic, zucchini and carrot.
  • Add lentils and all remaining ingredients. Simmer gently for 30 – 40 minutes.
  • While Bolognaise is simmering, cook the pasta.
  • Place cooked Bolognaise into a serving dish and sprinkle with the grated cheese.
  • Serve: serve with the pasta and a side salad. Preparation time: 40 – 45 minutes Cooking time: approximately 1 hour
