Ingredients

  • 500 g Beef Mince beef, lean, raw
  •  
    400 g Red Lentils red, cooked
  •  
    450 g Tomato canned undrained
  •  
    125 g Mushroom fresh, common, fresh
  • 400 g Carrots
  • 400 g Celery fresh, raw
  • 3 tbsp worcestershire Sauce
  •  
    600 g Fettucine
  •  
    2 Onion mature, brown, raw
  •  
    15 g Minced Garlic
  • 500 g Cauliflower fresh, raw
  • 300 g Cheese cheddar, processed, other
  • 2 tsp paprika

Instructions
 

  • 1.Cook pasta in pot of boiling water, drain and rinse, set aside.
  • 2.Heat the olive oil in a frypan over medium-high heat. Add the onion and garlic and fry until translucent.
  • 3.Add the carrot, celery, mushrooms and cauliflower and cook for 2-3 minutes or until soft.
  • 4.Add the beef mince, lentils, paprika and cook for 3-5 minutes until browned. Add the tomato, Worcestershire sauce, bay leaves and water or stock and bring to the boil. Reduce the heat and simmer for 15-20 mins, stirring occasionally,adding more water if needed .
  • 5.Serve with fettucine and grated cheese on top.

Notes

Vegetarian version: 
  • Replace mince with equal amounts of Quorn mince.
 
1. Milk (Dairy)

  • Modification: Use a dairy-free cheese alternative (such as coconut, soy, or nut-based cheese—choose soy/nut-free if needed).
2. Wheat/Gluten

    • Substitute fettucine with gluten-free pasta (rice, corn, or legume-based).
