1.Cook pasta in pot of boiling water, drain and rinse, set aside.
2.Heat the olive oil in a frypan over medium-high heat. Add the onion and garlic and fry until translucent.
3.Add the carrot, celery, mushrooms and cauliflower and cook for 2-3 minutes or until soft.
4.Add the beef mince, lentils, paprika and cook for 3-5 minutes until browned. Add the tomato, Worcestershire sauce, bay leaves and water or stock and bring to the boil. Reduce the heat and simmer for 15-20 mins, stirring occasionally,adding more water if needed .
5.Serve with fettucine and grated cheese on top.
