Ingredients

  • 1 skinless chicken breast
  • 1 tbsp maple syrup
  • 1 tsp wholegrain mustard
  • 1 clove garlic clove crushed
  • 1 tsp Drizzle extra virgin olive oil
  • 1 carrot sliced
  • 100 g broccoli chopped into florets
  • 100 g baby spinach to serve

Method

  1. Heat oven to 180 degrees (c)
  2. Mix together the syrup, garlic, mustard and oil and add chicken breast. Place the chicken breast and marinade in a piece of foil big enough to wrap it up into a parcel and place in the oven for 15mins or until cooked through
  3. Steam the carrot and broccoli and serve with raw spinach
