Peri Peri Chicken & Black Bean Salad

Ingredients

  • ½ cup cooked brown rice
  • ½ cup canned black beans
  • ½ cup canned corn
  • ½ avocado
  • Diced tomatoes chopped tomatoes
  • 50 g sliced peri peri chicken
  • Fresh lime juice
  • Coriander leaves

Instructions
 

  • In a medium salad bowl combine ½ cup each cooked brown rice, canned black beans & canned corn.
  • Stir through ½ avocado, diced, chopped tomatoes, 50g sliced peri peri chicken, fresh lime juice & coriander leaves.
