Peri Peri Chicken & Black Bean Salad
Ingredients
- ½ cup cooked brown rice
- ½ cup canned black beans
- ½ cup canned corn
- ½ avocado
- Diced tomatoes chopped tomatoes
- 50 g sliced peri peri chicken
- Fresh lime juice
- Coriander leaves
Instructions
- In a medium salad bowl combine ½ cup each cooked brown rice, canned black beans & canned corn.
- Stir through ½ avocado, diced, chopped tomatoes, 50g sliced peri peri chicken, fresh lime juice & coriander leaves.
