Peri Peri Chicken & Black Bean Salad

½ cup cooked brown rice
½ cup canned black beans
½ cup canned corn
½ avocado
Diced tomatoes chopped tomatoes
50 g sliced peri peri chicken
Fresh lime juice
Coriander leaves
In a medium salad bowl combine ½ cup each cooked brown rice, canned black beans & canned corn.
Stir through ½ avocado, diced, chopped tomatoes, 50g sliced peri peri chicken, fresh lime juice & coriander leaves.
