Beef and Peanut Stir Fry – Low FODMAP

FODMAP Recipe
Total Time 30 minutes

Ingredients

  • 400 g Beef stir fry strips
  • 1 tsp fine sea salt
  • cracked black pepper to taste
  • fresh red chilli
  • 1 tbsp garlic-infused olive oil
  • piece of ginger finely chopped
  • red capsicums seeded and thinly sliced
  • 5 broccolini
  • 2 bok choy roughly chopped
  • ½ cup peanuts unsalted and roasted
  • ¼ cup soy sauce
  • 1 tsp White sugar
  • 8 g Fresh coriander
  • 2 cups basmati rice

Instructions
 

  • Boil water for rice in a large pot, cook as per instructions on packet
  • Sprinkle the salt and pepper on the beef. Heat half of the garlic infused oil in a large non stick frying pan, add chilli(if using) and ginger, stirring for 1-2 minutes or until golden. Remove and set aside.
  • Heat remaining oil and quickly cook the beef in batches until browned
  • Add the vegetables, peanuts and the chilli/ginger mixture as well as the soy sauce and sugar. Stir for 2-3 minutesuntil vegetables are tender and sauce has reduced
  • Add the coriander at the last minute and serve with the cooked basmati rice
