Boil water for rice in a large pot, cook as per instructions on packet
Sprinkle the salt and pepper on the beef. Heat half of the garlic infused oil in a large non stick frying pan, add chilli(if using) and ginger, stirring for 1-2 minutes or until golden. Remove and set aside.
Heat remaining oil and quickly cook the beef in batches until browned
Add the vegetables, peanuts and the chilli/ginger mixture as well as the soy sauce and sugar. Stir for 2-3 minutesuntil vegetables are tender and sauce has reduced
Add the coriander at the last minute and serve with the cooked basmati rice
