
Miso chicken with sweet potatoes
Ingredients
2 tbsp sesame oil
2 tbsp white miso paste
0.25 cup soy sauce or tamari sauce- 1 tbsp fresh ginger grated
- 2 cloves garlic chopped
1 tsp honey- chili flakes amount depends on you preference
- 2 tbsp spring onions chopped
1 kg chicken breast
2 tbsp sesame seeds
2 tbsp olive oil
3 sweet potatoes small in size and sliced
1 bunch asparagus ends trimmed
Instructions
- Preheat oven to 230 degrees Celsius.
- In a square baking dish, mix the sesame oil, miso paste, tamari/soy sauce, ginger, garlic, honey, chili flakes, and green onions. Add the chicken and toss to fully coat. Sprinkle the chicken with sesame seeds. Bake 20 minutes, until cooked through. If desired, you can grill the chicken for 1-2 minutes to help it caramelize on top.
- During the same time, rub a baking sheet with oil. Add the sweet potatoes and asparagus. Toss with olive oil, salt, and pepper. Bake 15 minutes, toss and cook another 5 minutes until the potatoes are crisp.
- Serve the chicken, sweet potatoes, and asparagus.
Notes
This can be served with rice or quinoa for extra energy or to suit your appetite.Â
