Spinach and lentil nasi goreng

Ingredients

  •  
    2 tsp extra virgin olive oil
  • 1 red onion ends and papery skin removed then finely chopped
  • 1 red capsicum remove core and seeds and dice the flesh
  • 1 cup frozen corn
  • 250 g frozen spinach
  •  
    400 g brown lentils (tinned) drain liquid and rinse with water
  • 3 cups cooked brown rice
  • 4 Egg
  • 4 tbsp tamari soy sauce salt reduced
  • 1 tsp curry powder

Instructions
 

  • Boil the rice, drain and put to one side (or use microwavable rice)
  • Heat oil in a large wok or frying pan over a high heat, add onion and cook for 2- 3 minutes
  • Add the capsicum, corn and spinach and cook for another 2 minutes. Sprinkle the curry powder and add the tamari sauce
  • Rinse the lentils. Add with rice to frying pan. Stir until combined and heated through
  • Fry the eggs and serve on top sunny side up!

Notes

You can freeze this dish (minus the egg). Defrost in the fridge overnight. Heat until piping hot. Cook eggs fresh and add to the hot rice.
