Zucchini & haloumi toastie

  • ¼ zucchini grated
  • 50 g haloumi grated
  • 6 Mint roughly chopped
  • 2 slice multigrain bread


  • In a small bowl mix together zucchini, mint, haloumi, pepper and a drizzle of olive oil
  • Pile on top of 1 piece of whole-grain bread
  • You want to have a large pile on top of the bread as it will become compressed in the sandwich press
  • Top with remaining bread and place on the sandwich press
  • Lower the lid, it is ok at this stage if some of the zucchini mix spills out as the haloumi will help it stick to the bread
  • Cook until toastie and golden
