Zucchini & haloumi toastie
Ingredients
- ¼ zucchini grated
- 50 g haloumi grated
- 6 Mint roughly chopped
- 2 slice multigrain bread
Instructions
- In a small bowl mix together zucchini, mint, haloumi, pepper and a drizzle of olive oil
- Pile on top of 1 piece of whole-grain bread
- You want to have a large pile on top of the bread as it will become compressed in the sandwich press
- Top with remaining bread and place on the sandwich press
- Lower the lid, it is ok at this stage if some of the zucchini mix spills out as the haloumi will help it stick to the bread
- Cook until toastie and golden
