Ingredients

  • 2 tbsp spring onion
  • ½ red capsicums seeded and diced
  • ½ carrot grated
  • ground turmeric pinch
  • 1 tbsp soy sauce
  • 1 tsp sesame seeds toasted
  • ½ cup firm tofu crumbled
  • multigrain bread x1 slice

Method

  1. Heat oil in a fry pan and sauté spring onion, capsicum and carrots for 2-3 minutes.
  2. Add the turmeric, soy sauce and sesame seeds and stir through. Fry for a further 2-3 minutes.
  3. Add in the tofu and cook for a further 4-5 minutes, on a low heat, breaking up any big pieces and season to taste
  4. Serve the scrambled tofu on a slice of toast.
