Tofu Tacos
Ingredients
1 Drizzle extra virgin olive oil
250 g firm tofu sliced
1 red onion remove ends and papery skin then chopped
2 tsp ground cumin
½ tsp dried chilli flakes
1 400g tin diced tomatoes
6 corn tortilla
60 g rocket leaves
1 cup tinned corn
lime wedges
Instructions
- Heat oil in a large frying pan over a medium- high heat, add the tofu and cook until golden on each side.
- Add a little more oil to the pan, add the onions and cook until soft (about 3 mins)
- Add cumin and chilli and cook for another minute.
- Add the diced tomatoes, bring to the boil, reduce the heat to medium and simmer for about five minutes to allow the sauce to thicken
- Cook corn tortillas according to packet
- Top each tortilla with tofu, tomato mixture, corn and rocket and serve with a squeeze of limeHeat oil in a large frying pan over a medium- high heat, add the tofu and cook until golden on each side.
