Tofu Tacos

Ingredients

  • 1 Drizzle extra virgin olive oil
  • 250 g firm tofu sliced
  • 1 red onion remove ends and papery skin then chopped
  • 2 tsp ground cumin
  • ½ tsp dried chilli flakes
  • 1 400g tin diced tomatoes
  • 6 corn tortilla
  • 60 g rocket leaves
  • 1 cup tinned corn
  • lime wedges

Instructions
 

  • Heat oil in a large frying pan over a medium- high heat, add the tofu and cook until golden on each side.
  • Add a little more oil to the pan, add the onions and cook until soft (about 3 mins)
  • Add cumin and chilli and cook for another minute.
  • Add the diced tomatoes, bring to the boil, reduce the heat to medium and simmer for about five minutes to allow the sauce to thicken
  • Cook corn tortillas according to packet
  • Top each tortilla with tofu, tomato mixture, corn and rocket and serve with a squeeze of limeHeat oil in a large frying pan over a medium- high heat, add the tofu and cook until golden on each side.

  • Add the diced tomatoes, bring to the boil, reduce the heat to medium and simmer for about five minutes to allow the sauce to thicken
  • Cook corn tortillas according to packet
  • Top each tortilla with tofu, tomato mixture, corn and rocket and serve with a squeeze of lime
