Thai Chicken Burger

Thai chicken burger

  • 2 skinless chicken breast
  • 1.5 red thai curry paste
  • 1 Drizzle extra virgin olive oil
  • ½ red onion
  • 1 avocado
  • 1 large tomato
  • 1 cup lettuce or spinach or rocket leaves
  • ½ Lebanese cucumber
  • 2 tbsp reduced-fat plain yoghurt
  • 4 wholegrain buns


  • Slice chicken breasts in half, horizontally. Spread the curry paste evenly over the chicken breasts and sit in a bowl for 5 minutes to marinate
  • Prepare the salad ingredients – slice the onion, tomato, avocado and cucumber
  • Heat olive oil in a large frying pan and cook the chicken breasts for approximately 5 minutes on each side or until cooked through and golden
  • Slice the buns in half and assemble the burgers – bottom bun, avocado, tomato, onion, cucumber, chicken, lettuce, yoghurt and the top of the bun
