
Mushroom & goats cheese pasta salad
Ingredients
250 g dried pasta any shape
1 tsp Drizzle extra virgin olive oil
350 g mushrooms sliced
½ bunch kale remove stems and chop
125 g cherry tomatoes sliced in half
60 g goats cheese
Instructions
- Bring a pot of water to the boil and add in the pasta to cook for 8-10 minutes or until cooked
- Heat the olive oil in a frying pan over medium-high heat and add the mushrooms and kale to cook for 5-7 minutes or until the mushrooms are browned and kale is crispy
- Add the tomatoes to the frying pan to warm through
- Drain the water from the pasta and transfer the vegetables from the frying pan to the pot. Add in the goats cheese and stir well to combine
