Mushroom & goats cheese pasta salad

  • 250 g dried pasta any shape
  • 1 tsp Drizzle extra virgin olive oil
  • 350 g mushrooms sliced
  • ½ bunch kale remove stems and chop
  • 125 g cherry tomatoes sliced in half
  • 60 g goats cheese


  • Bring a pot of water to the boil and add in the pasta to cook for 8-10 minutes or until cooked
  • Heat the olive oil in a frying pan over medium-high heat and add the mushrooms and kale to cook for 5-7 minutes or until the mushrooms are browned and kale is crispy
  • Add the tomatoes to the frying pan to warm through
  • Drain the water from the pasta and transfer the vegetables from the frying pan to the pot. Add in the goats cheese and stir well to combine
