Lentil Burgers

Ingredients

  • 1 brown onion finely chopped
  • 2 tsp crushed garlic
  • 1 ½ tsp mixed dried herbs
  • 1 ½ cup 400g tin of brown lentils 240g
  • 1 Egg
  • ¼ cup wholemeal plain flour
  • ¼ cup rolled oats
  • 2 tbsp salt reduced tomato paste
  • 150 g sliced beetroot drained
  • 1 baby cos lettuce
  • 1 cucumber sliced
  • 1 large tomato sliced
  • 4 whole grain buns

Instructions
 

  • Heat 1 tbsp olive oil in a large fry pan on medium heat
  • Add the onion, garlic and herbs to the fry pan and stir fry for 5 minutes or until softened
  • In a large bowl, combine lentils, egg, oats, flour, tomato paste and fried onion mix
  • Divide the mixture into four and form each into a ball
  • Heat the same fry pan to medium and add 1 tbsp olive oil
  • Place each ball in the fry pan and gently squish to form a patty
  • Fry both sides for 5 minutes or until browned
  • Slice the buns in half and assemble the burgers – bottom bun, tomato, cucumber, lentil patty, beetroot, lettuce, top bun.
