Instructions
  1. Heat the oil in a large saucepan on medium-high heat. Cook onion and celery, stirring, for 5 minutes, or until soft. Add the ginger, garlic and chilli and cook, stirring, for about 1 minute.
  2. Add the sweet potato, pumpkin, chickpeas, stock and 2 cups of water, and bring to the boil. Reduce heat and simmer, uncovered, for 20 minutes, or until vegetables are very tender. Set aside to cool slightly.
  3. Blend soup in batches until smooth. Return to clean saucepan and heat over medium heat until hot. Season with cracked black pepper. Sprinkle with pepitas and coconut, and serve with a wedge of lime.

Instructions
  1. Cook rice according to packet instructions. Drain. Cool.
  2. Meanwhile, blanch snow peas in boiling water for 1 minute, then plunge into a bowl of cold water. Drain and set aside.
  3. Place broad beans into a microwave-proof bowl with 2 tablespoons water. Microwave on HIGH for 1 minute. Drain, cool and remove shells.
  4. Combine vegies, fruit and walnuts with cooled rice.
  5. Whisk together garlic, juice and oil. Pour over salad and toss to combine.

Instructions
  1. Fry up the onion and garlic for a couple of minutes before adding the mince
  2. Add all the ingredients to the fry pan and mix through
  3. Simmer gently until vegetabled cooked

Recipe Notes

Pasta in the recipe gives 1/2 cup cooked pasta per serve. Increase quantity as required. Swap pasta for an equal measure of brown rice

Serve with 1-2 cups of fresh or frozen vegetables
