Grilled Veg Pizza

  • 4 wholemeal pita breads
  • 4 tbsp salt reduced tomato paste salt reduced
  • 1 eggplant sliced
  • 2 medium zucchini sliced into rounds
  • 1 red capsicum seeds removed, cut into small pieces
  • 2 carrot grated
  • 1 cherry tomatoes sliced into halves
  • 1 cup cottage cheese


  • Pre-heat the over to 180°C
  • Heat the olive oil in a frying pan over medium heat
  • Add the sliced eggplant, zucchini and capsicum and cook for around 4 minutes or until browned on both sides
  • Spread the tomato paste onto the pita bread rounds, add the grated carrot, layer up the grilled vegetables, then the cherry tomatoes and top with the cottage cheese
  • Bake in the oven for 10-15 minutes or until the bases are crispy and the cheese is melted
