Fragrant lamb and prune crockpot
Ingredients
- 450 g lean lamb leg steaks cut into chunks
- 3 cloves garlic clove crushed
- 6 cm piece of ginger grated
- Salt and pepper to taste to season
- 2 tbsp Drizzle extra virgin olive oil
- 6-7 sprigs rosemary leaves only
- 4 teaspoons juniper berries roughly crushed
- 1 cup prunes
- 3 parsnips peeled, diced
- 3 carrot peeled, diced or grated
- 1 orange kumara diced
- 1 cup pearl barley
- 1½ cups chicken stock
- 2 tbsp red wine vinegar
- ¼ teaspoon salt
- boiling water
To Serve
- 4 cups mashed potato
- ¼ cup Fresh parsley
Instructions
- Preheat slow cooker for 5 minutes on low. Add ingredients– meat first, then veges then sauce. Add salt and 2 cups boiling water. Use a large spoon to break up ingredients a little.
- Cover and cook for 7-8 hours. Adjust seasoning. Serve with mashed potato and parsley.
