Fragrant lamb and prune crockpot

Ingredients

  • 450 g lean lamb leg steaks cut into chunks
  • 3 cloves garlic clove crushed
  • 6 cm piece of ginger grated
  • Salt and pepper to taste to season
  • 2 tbsp Drizzle extra virgin olive oil
  • 6-7 sprigs rosemary leaves only
  • 4 teaspoons juniper berries roughly crushed
  • 1 cup prunes
  • 3 parsnips peeled, diced
  • 3 carrot peeled, diced or grated
  • 1 orange kumara diced
  • 1 cup pearl barley
  • cups chicken stock
  • 2 tbsp red wine vinegar
  • ¼ teaspoon salt
  • boiling water

To Serve

  • 4 cups mashed potato
  • ¼ cup Fresh parsley

Instructions
 

  • Preheat slow cooker for 5 minutes on low. Add ingredients– meat first, then veges then sauce. Add salt and 2 cups boiling water. Use a large spoon to break up ingredients a little.
  • Cover and cook for 7-8 hours. Adjust seasoning. Serve with mashed potato and parsley.
