Chickpea, Feta and Avocado Salad
Ingredients
- 2 cups salad greens
- 1 large tomato
- 100 g cucumber
- 125 g canned chickpeas
- ¼ avocado
- 20 g feta.
- Drizzle extra virgin olive oil
- Drizzle balsamic vinegar
- 1 Tbsp pumpkin seeds
Instructions
- Toss 2 cups salad greens with sliced tomato, cucumber, 125g canned chickpeas, ¼ avocado & 20g feta.
- Drizzle with extra virgin olive oil, balsamic vinegar & 1 Tbsp pumpkin seeds
Notes
Great to have on it’s own but more filling and sustaining when topped with a meat or meat alternative such as tuna, chicken or tofu. Great to make in advance to have for your lunchbox.
