Chickpea, Feta and Avocado Salad

  • 2 cups salad greens
  • 1 large tomato
  • 100 g cucumber
  • 125 g canned chickpeas
  • ¼ avocado
  • 20 g feta.
  • Drizzle extra virgin olive oil
  • Drizzle balsamic vinegar
  • 1 Tbsp pumpkin seeds


  • Toss 2 cups salad greens with sliced tomato, cucumber, 125g canned chickpeas, ¼ avocado & 20g feta.
  • Drizzle with extra virgin olive oil, balsamic vinegar & 1 Tbsp pumpkin seeds


Great to have on it’s own but more filling and sustaining when topped with a meat or meat alternative such as tuna, chicken or tofu.  Great to make in advance to have for your lunchbox.
