
Beef lentil bolognaise
Ingredients
500 g lean beef mince Heart smart mince or <5% fat
1 400g tin of brown lentils drained and rinsed
2 carrot grated
1 zucchini grated
¼ celery whole head grated or finely sliced
½ whole cauliflower
2 cloves garlic clove crushed
1 red onion finely diced
1 400g tin reduced salt tomato soup
1 400g tin diced tomatoes
300 g Wholemeal spaghetti dry weight
Instructions
- Fry up the onion and garlic for a couple of minutes before adding the mince
- Add all the ingredients to the fry pan and mix through
- Simmer gently until vegetabled cooked
Notes
Pasta in the recipe gives 1/2 cup cooked pasta per serve. Increase quantity as required. Swap pasta for an equal measure of brown rice
Serve with 1-2 cups of fresh or frozen vegetables
