
Fragrant lamb and prune crockpot
Ingredients
450 g lean lamb leg steaks cut into chunks
3 cloves garlic clove crushed
6 cm piece of ginger grated
Salt and pepper to taste to season
2 tbsp Drizzle extra virgin olive oil
6-7 sprigs rosemary leaves only
4 teaspoons juniper berries roughly crushed
1 cup prunes
3 parsnips peeled, diced
3 carrot peeled, diced or grated
1 orange kumara diced
1 cup pearl barley
1½ cups chicken stock
2 tbsp red wine vinegar
¼ teaspoon salt
boiling water
To Serve
4 cups mashed potato
¼ cup Fresh parsley
Instructions
- Preheat slow cooker for 5 minutes on low. Add ingredients– meat first, then veges then sauce. Add salt and 2 cups boiling water. Use a large spoon to break up ingredients a little.
- Cover and cook for 7-8 hours. Adjust seasoning. Serve with mashed potato and parsley.
