Ingredients

Eggs

large zucchini
grated
2
carrots
peeled and grated
1
cup
corn
fresh/frozen/canned
1
brown onion
peeled and diced
¾
cup
wholemeal self-raising flour
1
cup
cheddar cheese
grated
Instructions
Preheat oven to 200°C (180ºC fan forced).
Whisk eggs and pepper
Mix all ingredients in a bowl
Pour into a lined and oiled baking dish
Bake for 40-45 minutes or until firm and golden brown.
Rest in the pan for 10 minutes before cutting into 6 slices.
Serve with a green side salad or extra veg
Notes
Optional:
Pepper, dried herbs, spray oil for the dish
