Loaded potato with savoury mince (Children)

Ingredients

  •  
    20 Small potatoes
  •  
    10 cup coleslaw Home made
  • 100 g Sour cream
  •  
    1.2 kg Mean beef mince
  •  
    4 tbsp taco seasoning

Instructions
 

  • Boil or steam the peeled new potatoes until tender, then drain.
  • While potatoes cook, brown the lean beef mince in a large pan.
  • Add taco seasoning to the cooked mince and stir well to combine; simmer for a few minutes.
  • Arrange cooked potatoes on a serving platter or plates.
  • Top each potato with a generous spoonful of savoury mince.
  • Add a dollop of regular sour cream to each loaded potato.
  • Finish with a heap of homemade coleslaw with cheese on top or on the side.

Notes

Vegetarian version:
  • Replace savoury mince with 3/4 cup of baked beans for each child/serve.

  • Modification: Use a dairy-free sour cream alternative (such as coconut-based or soy-based sour cream—choose soy-free if needed).

  • Modification:
    • Use egg-free, dairy-free, soy-free mayonnaise/dressing as needed.
