Add all dry ingredients into a food processor and blend to a fine powder
Add the banana and eggs and gradully pour in the milk, mix well until the batter has a slightly runny consistency.Add more milk if required
Rest batter for 15 minutes. The mixture may thicken during this time so if too thick to spoon into frypan, add moremilk
Heat some butter or spray oil in a frypan over medium heat. Spoon the mixture (2 heaped tablespoon per pancake)into the frying pan. Cook until bubbles start to form on top, then flip and cook for another minute.
Serve 2 pancakes per person and top with your favourite low FODMAP fruits and a splash of maple syrup.
