Instructions
  1. Spray a large saucepan with oil and set over a medium heat. Sauté onion for 3 minutes, or until softened. Add garlic, carrot, sweet potato and zucchini; cook, stirring occasionally, for 5 minutes, or until vegetables are hot.
  2. Stir in curry paste; cook, stirring, for 1 minute, or until fragrant. Stir in tomatoes, stock and 2 cups of water; cover and bring to the boil. Reduce heat. Partially cover; simmer, stirring occasionally, for 25 minutes. Stir through the chickpeas and simmer for 10 minutes, or until vegetables are tender.
  3. Stir through coriander. Ladle soup into bowls; top each with a dollop of yoghurt and extra coriander leaves.

Instructions
  1. Place vegetables in a roasting tray and cover with 1 tsp of oil and spices before putting in the oven at 180 degrees (C) for 10mins until cooked
  2. Pan fry the chicken breast and 1 tsp of oil so it is sealed on both sides and partially cooked through
  3. Add chicken breast to roasting tray with vegetables and bake for a further 5mins until chicken is cooked through.
  4. Cover chicken in foil and allow to rest for a few minutes before serving with roast vegetables
Recipe Notes

You could use chicken breast from a whole roasted chicken if you prefer.

  1. Combine sweet potato, garlic, mince, parsley, zucchini and egg. Mix well with your hands. Shape into four round patties and flatten.
  2. Spray a large frying pan with oil and place over medium heat. Cook patties for 5 minutes each side, or until cooked through.
  3. Halve rolls and toast. Top each with watercress, onion, burger, tomato, avocado and sweet chilli.
