Instructions
  1. Preheat oven to 180°C. To make meat sauce, spray a large frying pan with oil and place over medium heat. Add onion and garlic and cook until soft. Add mince and brown, then add carrot and cook for 5 minutes.
  2. Step 2Add tomatoes, tomato paste and spices to pan. Simmer for 20 minutes. Add broccoli and cook for 5 more minutes.
  3. Step 3Meanwhile, make cheese sauce. Combine milk, flour and table spread in a saucepan over medium heat. Whisk continuously until sauce thickens. Reduce heat to low and simmer, stirring, for 10 minutes. Stir in cheeses and season with ground black pepper.
  4. Step 4Cover the base of a deep lasagne dish with lasagne sheets. Pour a third of the meat mixture on top, followed by a third of the cheese sauce. Top with half the zucchini slices, then add another layer of lasagne sheets. Repeat layers, ending with cheese sauce. Transfer to oven and cook for 30–40 minutes. Cool slightly, then serve with salad.

Instructions
  1. Fry up the onion and garlic for a couple of minutes before adding the mince
  2. Add all the ingredients to the fry pan and mix through
  3. Simmer gently until vegetabled cooked
Recipe Notes

Pasta in the recipe gives 1/2 cup cooked pasta per serve. Increase quantity as required. Swap pasta for an equal measure of brown rice

Serve with 1-2 cups of fresh or frozen vegetables

  1. Thinly slice half the capsicum. Set aside for salad. Finely chop remaining half. Heat olive oil in a large saucepan over high heat. Sauté onion, garlic and chopped capsicum, stirring, for 5 minutes, or until softened.
  2. Add beef and cook, stirring, for 5 minutes, or until browned. Add all tomatoes and bring to the boil. Add Cauliflower and carrots and reduce heat to low and simmer for 10 minutes, or until sauce thickens and tomatoes break down.
  3. Meanwhile, cook pasta in boiling water until al dente. Add broccolini for last minute of cooking time. Drain. Stir pasta, kidney beans and broccolini into tomato sauce. Lightly grease an 8-cup capacity baking dish. Add pasta-broccolini mix.
  4. Preheat grill. Sprinkle pasta bake with grated parmesan. Grill for 5–10 minutes, or until cheese is golden.
  5. Meanwhile, combine salad ingredients with shaved parmesan and vinegar. Serve pasta with salad.
