Instructions
  1. Cook rice according to packet instructions. Drain. Cool.
  2. Meanwhile, blanch snow peas in boiling water for 1 minute, then plunge into a bowl of cold water. Drain and set aside.
  3. Place broad beans into a microwave-proof bowl with 2 tablespoons water. Microwave on HIGH for 1 minute. Drain, cool and remove shells.
  4. Combine vegies, fruit and walnuts with cooled rice.
  5. Whisk together garlic, juice and oil. Pour over salad and toss to combine.

  1. Preheat oven to 190°C. Spray 4 individual ovenproof dishes (around 2 cup-capacity) with oil. Cook gnocci and broccoli in a saucepan of boiling water for about 5 minutes, until gnocchi is cooked and broccoli is tender-crisp. Drain, then add to prepared ovenproof dishes.
  2. Step 2 Add tomatoes and remaining vegetables. Toss well then place fish fillets on top of vegies. Top each piece of fish with Mediterranean seasoning, lemon zest and juice.
  3. Step 3 Sprinkle with cheese and almonds. Bake for 25–30 minutes, or until lightly golden and fish is cooked through. Serve sprinkled with chopped fresh parsley.

Mediterranean spice mix:

3 Tbsp dried rosemary

2 tbsp ground cumin

2 tbsp ground coriander

1 tbsp dried oregano

2 tsp ground cinnamon

  1. Combine sweet potato, garlic, mince, parsley, zucchini and egg. Mix well with your hands. Shape into four round patties and flatten.
  2. Spray a large frying pan with oil and place over medium heat. Cook patties for 5 minutes each side, or until cooked through.
  3. Halve rolls and toast. Top each with watercress, onion, burger, tomato, avocado and sweet chilli.
